The team has always been very involved in protecting the environment, and is aware of the impact of their profession on the ecology. They are committed to responsible practices on a daily basis (such as sorting and composting waste, using renewable energy and local produce, etc.), and furnish their home using natural, noble materials.
In keeping with their commitment to the environment, it was only natural for the couple to move their restaurant (which opened in 1999 in Place Notre Dame, in the heart of Châtellerault's historic quarter) to this old bourgeois mansion, which they acquired to give it a new lease of life and offer their customers and the public the chance to enjoy this exceptional setting.
When the project to build the hotel finally came to fruition, Madame Serreau was convinced that it was entirely possible to combine modern comfort with environmental protection. In fact, she took full inspiration from the European Commission's recommendations when equipping and fitting out the rooms at the Hôtel de La Gourmandine, so as to minimise the impact of her business on nature as much as possible, while allowing her guests to enjoy all the comfort and benefits of healthy, high-quality materials.
Charm differs from beauty in that it is not necessarily linked to strictly aesthetic considerations or canons, but rather to a particular situation, attitudes, gestures, intonation and also to a ‘time bubble’ in which the person admiring and attributing the charm is caught. The charm of a hotelier or restaurateur, of a place, of a moment. It is an essentially baroque notion, furtive and elusive, and therefore particularly difficult to define. In fact, charm is often described as ‘indefinable’, surprising, even bewitching. It never leaves you indifferent.
This notion is interwoven with the sum of the details that often make all the difference.
